Conversely, the authority warned against operating within residential neighborhoods or near gas stations within 10 meters, or at intersections, emergency exits, and disabled parking spaces. The strict operational controls also include a ban on operating after midnight except with a special permit for 24-hour operation, and require owners to maintain continuous service for no more than two consecutive weeks or 30 non-consecutive days per year.
Technical and engineering specifications of vehicles
The regulations stipulate that the height of the food cart, including the sign, must not exceed 4.5 meters, its width must not exceed 2.6 meters, and its length must range between 2.3 and 10 meters. Investors are required to display a standardized electronic code that allows consumers and regulatory authorities to access licensing data transparently. Internally, two stainless steel sinks with secure drainage, non-slip and easy-to-clean flooring, adequate ventilation, and openings covered with wire mesh to prevent insects are mandatory. Preparing meals outside the cart is prohibited, and a separate trailer is required if charcoal or firewood is used. The use of wood for shelving is also prohibited and must be replaced with washable materials such as glass and aluminum.
Food health and safety standards
The authority emphasized adherence to food and drug regulations and the provision of safe drinking water. Chilled foods must be kept between 0 and 4 degrees Celsius, frozen foods below -18 degrees Celsius, and hot foods at a minimum of 60 degrees Celsius for consumption within a maximum of 6 hours. Storing uncooked foods on top of ready-to-eat foods is prohibited to prevent cross-contamination. The regulations also require employees to obtain health certificates, wash their hands regularly, use latex-free gloves, and immediately suspend any employee exhibiting symptoms of illness. Security, safety, and waste management requirements
The authority has regulated gas usage, stipulating that the total capacity of gas cylinders must not exceed 91 kilograms and must be mechanically secured outside the vehicle. The maximum amount of stored cooking oil is 450 liters. Two 6-kilogram dry chemical powder fire extinguishers and a fire blanket must be provided. Generators must meet specifications and operate quietly, with the exhaust pipe directed upwards at a height of 20 centimeters. Smoking is prohibited inside the vehicle, and the use of loudspeakers is forbidden except at official events. Regarding waste disposal, touchless containers must be used, and oil and charcoal remnants must be disposed of properly in metal bins. Finally, the authority has mandated the provision of electronic payment methods, noting that violators will be subject to municipal penalties and fines, with the right to appeal guaranteed.
